Description
Well known, this crisp golden brown cake is still made according to a secret family recipe dating back to the 19th century. In 2006, the VLAM (Flemish Office agro-marketing) awarded the official label Streekproduct uit de Westhoek (Regional Product Westhoek) to the wafer butter Biscuiterie Jules Destrooper. In the Westhoek, this cake is called Lukke. The origin of this name goes back to the time when this delicacy was offered on the occasion of New Year. In the past, the tradition was that the children present their New Year wishes (tradition known as the Lukken 'in Dutch) to their godparent. In appreciation of these vows, they received thin and crispy pancakes, sometimes with a drink. Every woman has turned to his own recipe. Cooking pancakes was part of a ritual that began the day after Christmas and ended at New Year's Eve. It was a real home and typical crafts! Each home had its own recipe and pan cakes specially made by the local blacksmith.
